Staff handling food in your business need formal hygiene training.

The Industry Guides to Good Hygiene Practice (
available from Chartered Institute of Environmental Health External Site Icon) outline the levels of training appropriate for particular staff and at what stage the training should be given.

Food Safety Officers refer to the relevant Industry Guides when inspecting your business.

Training Courses

We can offer a CIEH Level 2 Award in Food Safety in Catering here in Basildon, see list of scheduled courses below.

Unfortunately, we do not currently offer the Level 3 or 4 courses – The Chartered Inst. of Environmental Health (CIEH) Accredited Training can provide you wil details of training centres who run level 2, 3 & 4 courses including courses in languages other than English. The level will depend on responsibilities

***Generally, this includes food which is cooked or ready to eat. Person(s) who handle open high risk food could include, for example – commis chef, cook, catering supervisor, kitchen assistant and bar staff who prepare food.
